Dos formas, dos lógicas

El infinitivo mira hacia adelante: intención, plan, propósito. El gerundio mira hacia la actividad misma: experiencia, hábito, hecho.
“I want to travel. / I enjoy travelling.”
No hay regla universal, pero sí patrones claros.

Stop to vs. Stop -ing

stop + to
He stopped to talk to her.
Interrumpió lo que hacía con el propósito de hablar.
stop + -ing
He stopped talking.
Abandonó la acción de hablar por completo.
Lo mismo ocurre con remember, forget y try.
